Cottage Cheese Crab Salad for Two |

A nice, light lunch that's simple to prepare. I serve it over Romaine leaves. Ingredients:
1/2 cup small curd cottage cheese |
1/4 cup sour cream |
1 teaspoon dijon mustard |
1/8 teaspoon garlic powder |
1/8 teaspoon black pepper |
8 ounces imitation crabmeat, chopped |
1/4 cup celery, chopped |
1/4 cup sweet onion, chopped |
lettuce leaf |
1 tomato, cut into wedges |
Directions:
1. In a bowl, combine cottage cheese, sour cream, mustard, garlic powder, and pepper. Stir in crab, celery, and onion. 2. Serve on lettuce-lined plates with tomato wedges. |
