COTIGA CHEESY POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Byrd Estate in Cedar Hill, Texas in 1993. Ingredients:
6 potatoes |
15 ounce container fresh salsa |
2 cups cotiga cheese |
3 eggs |
Directions:
1. Wash potatoes then wrap in foil and bake 1 hour at 400. 2. Upon removing potatoes from oven cut in half. 3. Scrape out center of potatoes into rectangular baking dish. 4. Shred cheese and spread evenly over potatoes. 5. Beat eggs together and pour evenly over entire dish. 6. Bake at 350 for 45 minutes. |
