Ingredients:
2 tablespoons olive oil
1 garlic clove
1/4 cup red onions, diced
1 cup black beans
1/2 red bell pepper, chopped
1/4 cup green onions, chopped
1 tablespoon chili powder
1 tablespoon hot sauce
4 6-inch tortillas
1 egg
1/2 cup rice, cooked
1 tomato, diced
cheddar cheese, shredded
Directions:
1. Heat olive oil in a large skillet over medium heat. Sauté garlic and onions until tender, about 5 minutes. Add beans and stir. Add red peppers, green onions, chili powder and hot sauce; cook for 5 to 6 minutes.
2. Meanwhile place tortillas in oven until crispy, about 6 to 8 minutes.
3. In a small skillet, scramble the egg. Add egg, rice and tomatoes to black bean mixture and stir to combine.
4. To serve, distribute rice and bean mixture over crispy tortillas and top with Cheddar cheese (optional0; slice into quarters for ease
