Great for company!!! Ingredients:
2 tablespoons olive oil |
1 garlic clove |
1/4 cup red onions, diced |
1 cup black beans |
1/2 red bell pepper, chopped |
1/4 cup green onions, chopped |
1 tablespoon chili powder |
1 tablespoon hot sauce |
4 6-inch tortillas |
1 egg |
1/2 cup rice, cooked |
1 tomato, diced |
cheddar cheese, shredded |
Directions:
1. Heat olive oil in a large skillet over medium heat. Sauté garlic and onions until tender, about 5 minutes. Add beans and stir. Add red peppers, green onions, chili powder and hot sauce; cook for 5 to 6 minutes. 2. Meanwhile place tortillas in oven until crispy, about 6 to 8 minutes. 3. In a small skillet, scramble the egg. Add egg, rice and tomatoes to black bean mixture and stir to combine. 4.
