These are an easy and flavorful potato for weeknight or weekends. Can also be made with small white potatoes. Ingredients:
24 small red potatoes |
4 tablespoons butter |
1 green onion, minced |
2 garlic cloves, minced |
1/4 cup chopped parsley |
1/2 teaspoon lemon juice |
1 chives, minced |
parsley sprig (to garnish) |
Directions:
1. Boil potatoes approximately 25 minutes. 2. Melt butter in an 8 inch skillet. Saute green onion and garlic for 3 minutes. Stir in parsley and lemon juice. 3. Drain potatoes and place in a serving dish. Pout butter mixture over potatoes to thoroughly coat. Sprinkle chives on top of the potatoes. Garnish with parsley sprigs. |
