Based on a recipe from C. Joe Murray of Angoon, Alaska, and printed in the August 1980 issue of Alaska magazine, this is a nice way to use up leftover salmon! You can substitute other kinds of leftover fish, if you like. Ingredients:
1 cup bisquick baking mix |
1 tablespoon cornmeal |
1/2 cup milk |
1 egg |
1 cup boned cooked salmon, in pieces |
1/4 cup chopped onion |
1/4 teaspoon garlic powder |
1/2 cup corn |
Directions:
1. Mix together the baking mix, corn meal, milk, and egg, and stir well. 2. Stir in remaining ingredients. 3. Cook as you would pancakes in a hot skillet with oil. |
