Tasty and easy to make corn chowder. You can use this same recipe and make your favorite seafood chowder. Ingredients:
1 (2 inch) sq. of bacon |
1 large onion, chopped |
2 medium potatoes, diced |
3 cups chicken broth |
1 can creamed corn |
1/4 tsp. white pepper |
1/2 tsp. dried thyme or 1 tbsp. fresh |
1-1/2 cups milk, homogenized, evaporated milk or half n' half cream |
*i prefer half n' half cream |

Directions:
1. Dice bacon and fry slowly in large pot. 2. Remove, drain on paper towels and set to one side. 3. Sauté onion in bacon drippings. 4. Add potatoes, broth, pepper and thyme. 5. Simmer covered for about 30 minutes or until the potatoes are done. 6. Stir in creamed corn and milk, and whisk to blend. 7. Taste for seasoning. 8. Garnish with bacon and paprika. |
