Cornmeal Pancakes With Dried Pineapple |

Different twist on the standard pancake These are very moist, very tasty and different. Topped with dried pineapple makes it savory and sweet, a great recipe. Enjoy Ingredients:
3/4 cup yellow cornmeal |
1/2 cup all purpose flour |
2 tablespoons sugar |
1-1/2 teaspoons baking powder |
1/4 teaspoon salt |
1 cup milk |
2 eggs |
2 tablespoons butter melted |
5 ounces dried pineapple chopped |
Directions:
1. In medium bowl combine cornmeal, flour, sugar, baking powder and salt. 2. Mix well then set aside. 3. Whisk together milk, eggs and butter. 4. Add to dry ingredients mixing just until dry ingredients are moistened. 5. Stir in dried fruit then allow to stand 5 minutes. 6. Heat lightly greased griddle or skillet over medium heat until hot. 7. For each pancake pour scant 1/4 cup batter onto hot griddle. 8. Turn pancakes when tops are covered with bubbles and edges look cooked. 9. Cook second sides until golden brown then serve warm with maple syrup. |
