CORNMEAL PANCAKES WITH APPLESAUCE This recipe came from an Estate sale. I obtained it when I purchased the family collection from the Fester Estate in Garland, Texas in 1996. Ingredients:
1 cup all purpose flour |
3/4 cup cornmeal |
1 tablespoon granulated sugar |
1-1/2 teaspoons baking powder |
1/2 teaspoon apple pie spice |
1/4 teaspoon salt |
2 slightly beaten eggs |
1 cup milk |
1 teaspoon cooking oil |
nonstick spray coating |
3/4 cup unsweetened applesauce |
Directions:
1. Stir together flour, cornmeal, sugar, baking powder, apple pie spice and salt. 2. In small mixing bowl combine eggs, milk and oil. 3. Add all at once to flour mixture and stir just until blended but still slightly lumpy. 4. Spray a griddle with nonstick spray coating then preheat griddle over medium heat. 5. For each pancake pour about 1/4 cup batter onto hot griddle then cook 2 minutes per side. 6. In small saucepan heat applesauce until warm then serve with pancakes. |
