This dish perks up the diner table for only $1.69 a serving. It's flavorful cornmeal/breadcrumb coating is a good variation from the usual. Ingredients:
1/2c dry breadcrumbs |
1/2c cornmeal |
1/3c grated parmesan cheese |
1/4c fresh minced parsley or 4tsp.dried parsley |
3/4tsp garlic powder |
1/2tsp salt |
1/2tsp pepper |
1/2tsp onion powder |
1/2tsp dried thyme |
1/2c buttermilk |
1 cut-up chicken(3 to 4lbs),skin removed |
1tbs butter |
Directions:
1. In a large resealable bag,combine first 9 ingredients. Place the buttermilk in a shallow bowi. Dip chicken in buttermilk,then in the bag,a few pieces at a time,and shake to coat. 2. Place in 13x9 baking pan coated with cooking spray. Bake at 375 for 10 mins;drizzle with butter. Bake 30-40 mins longer or till juices run clear. |
