Ingredients:
1 1/4 cups cornmeal |
1/4 cup all-purpose flour |
1 1/2 teaspoons baking powder |
1/4 teaspoon baking soda |
1/2 teaspoon salt |
1 egg, beaten |
1 cup buttermilk |
2 tablespoons shortening, melted |
Directions:
1. Combine first 5 ingredients in a medium mixing bowl; make a well in center of mixture. Combine egg, buttermilk, and shortening; mix well. Add to dry ingredients, stirring just until moistened. 2. Heat a well-greased muffin pan in a 400° oven 3 minutes or until very hot. Spoon mixture into muffin pan, filling two-thirds full. Bake at 450° for 18 minutes or until lightly browned. |
