This recipe came from a GE manual back in 1937. It makes a very good side dish-slightly sweet and fluffy. Ingredients:
1 1/2 cups cornmeal |
1 1/2 cups flour |
4 teaspoons baking powder |
1 teaspoon salt |
4 tablespoons sugar |
6 tablespoons shortening |
3 eggs, separated |
1 3/4 cups milk |
Directions:
1. Sift dry ingredients. 2. In a medium bowl, beat egg yolks; add milk and melted shortening. 3. Combine sifted dry ingredients with the egg yolk mixture. 4. Beat egg whites; fold into the mixture. 5. Pour into a buttered 6x9x2.5-inch pan and bake in a 400° oven for 45 to 60 minutes. |
