Cornmeal and Chili Muffins |

Moist flavorful muffin Ingredients:
1 cup cornmeal |
1 tablespoon sugar |
1 1/2 cups flour |
1 tablespoon baking powder |
2 tablespoons vegetable oil |
1 egg, beaten |
1 1/4 cups milk |
1 (15 ounce) can corn |
4 green onions, finely chopped |
2 dried red chilies, finely chopped |
Directions:
1. Preheat oven to 400 degrees. 2. Combine dry ingredients in a bowl. 3. Measure milk and add oil and egg to the cup. 4. Beat, then add to a well in the dry ingredients. 5. Stir until just moistened. 6. Add remaining ingredients, stirring lightly. 7. Grease a one dozen muffin tins. 8. Pour 1/2 c batter into each well. 9. Bake 20 minutes. 10. Let cool 5 minutes before serving. |
