Not sure where I found this recipe but it sounds simple and good. Prep time includes time to marinate. Ingredients:
2 cornish hens |
2 tablespoons dark rum |
1 juice of one lime |
1 1/2 tablespoons honey |
1 garlic clove, crushed |
1/8 teaspoon salt |
1 tablespoon coriander seed |
1/2 teaspoon black peppercorns |
Directions:
1. Cut hens in half lengthwise. 2. Wash hens and pat dry. 3. Mix together rum, lime juice, honey, garlic, and salt. 4. Rub mixture all over hens and marinate at least 30 minutes. 5. Coarsely crush coriander seeds and peppercorns together with a mortar and pestle. 6. Remove hens from marinade, reserving the marinade. 7. Press crushed coriander seeds and peppercorns into skin side of hens. 8. Grill over hot coals for 20 - 25 minutes, turning frequently and basting with reserved marinade. |
