The page I printed from the internet that has this recipe no longer exists. This is absolutely delicious and I sometimes make it with whole chicken legs. Looks good for a formal dinner, and could also substitute the turkey at Thanksgiving. It's a bit time consuming, but the result is so delicious, believe me! Ingredients:
1/2 cup olive oil |
1/4 cup red wine vinegar (i use regular wine when vinegar is not available) |
1/4 cup sherry wine |
1/2 cup honey |
1 tablespoon cumin, ground |
3/4 teaspoon cinnamon, ground |
1 1/2 teaspoons anise seed (i like to grind it) |
8 cornish hens |
salt and pepper |
Directions:
1. Combine oil, vinegar, sherry, honey, cumin, anise and cinnamon in a small heavy saucepan. Simmer until mixture thickens slightly, stirring constantly (about 3 minutes). 2. Salt and pepper hens generously and bursh them with glaze. 3. Roast in 400 F oven until thigh juices run clearn when pierced (about 45-50 minutes). Be sure to baste hens with glaze every 10 minutes. |
