found on an old scrap torn from a magazine - untried as yet by me Ingredients:
100 g butter, chopped |
1/2 cup brown sugar |
2 tablespoons maple syrup |
3/4 cup corn flakes, lightly crushed |
1/2 roasted peanuts, chopped |
cake mix |
125 g butter |
3/4 cup brown sugar |
2 eggs |
1 1/2 cups self raising flour |
1 teaspoon ground cinnamon |
1/2 cup buttermilk |
2 tablespoons maple syrup |
Directions:
1. Grease 14 cms x 21 cms loaf pan, line base and sides with baking paper. 2. Combine butter, sugar and syrup in bowl, mix well. 3. Spread over base of pan, sprinkle with cornflakes and nuts. 4. CAKE MIX. 5. Beat all cake batter ingredients in a medium bowl with electric mixer on low speed till combined well and smooth. 6. Spread this mix over cornflake mixture in pan. 7. Cook at 180 C for 55 minutes. 8. Let stand in tin 10 minutes before turning out. |
