I found this recipe in a magazine, changed it to suit my family, and hope you like it too. It is VERY filling! Great meal with a lovely tossed salad. Ingredients:
4 large tortillas (or 8 small) |
2 cups tomato sauce |
1 lb ground beef |
1 medium onion, chopped fine |
1/2 cup mushroom, chopped fine |
1 teaspoon butter |
1 cup corn flakes, crushed |
1 cup grated cheddar cheese |
1 teaspoon spices (i use mrs dash) |
Directions:
1. Melt butter in fry pan. 2. Add onion and mushrooms and saute til tender. 3. Add ground beef. 4. Fry until browned. 5. Add one cup of tomato sauce, 1 cup cornflakes and 1/2 cup shredded cheddar cheese. 6. Mix well and heat. 7. Place several tablespoons in the centre of a tortilla shell. 8. Fold in ends, and wrap sides around. 9. Place 1 cup tomato sauce in bottom of greased 9 x 13 pan. 10. Place filled enchiladas (seam side down) on top of tomato sauce. 11. Pour remaining meat mixture on top. 12. Bake 15 minutes 350F. 13. Add 1/2 cup shredded cheese to top and place back in oven until melted (approx 5 mins). |
