Nice side summer salad
Ingredients:
4 ears of fresh corn, de-silked, steamed, cut off the cob
or 1 can of shoe peg corn, drained
1 can of cooked black beans, rinsed and drained
1 or two pickled jalapenos diced
1/2 of red bell pepper, diced
3 green onions, diced
1 tablespoon of cilantro leaves, chopped
2 tablespoon of vegetable oil
3 tablespoons of lime juice
1/2 tsp of cumin
1/4 tsp of adobo seasoning
fresh ground black pepper, generous amounts
Directions:
1. Clean fresh corn, place in steamer, steam until cooked.
2. Cool and cut off cobs.
3. combine with black beans and chopped vegetables.
4. Whisk oil, lime and seasonings.
5. Pour over prepped veggies.
6. cover and refrigerate.
7. Improves if flavors blend for a few hours before serving.
