CORNED BEEF SURPRISES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brady Estate in Fate, Texas in 1992.
Ingredients:
1 cup instant mashed potato buds
2/3 cup boiling water
2 tablespoon instant minced onion
2 teaspoons prepared horseradish
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
9 ounces corn beef spread
40 cheddar cheese cubes
1 egg slightly beaten
1/4 cup breadcrumbs
vegetable oil
Directions:
1. Combine potato buds, water, onion, horseradish, salt and pepper.
2. Stir in corned beef and mix thoroughly.
3. Roll 2 teaspoons corned beef mixture around a cheese cube to form a ball.
4. Dip balls in egg then roll in breadcrumbs.
5. Deep fry in hot oil 3 minutes then serve hot.
