CORNED BEEF SURPRISES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brady Estate in Fate, Texas in 1992. Ingredients:
1 cup instant mashed potato buds |
2/3 cup boiling water |
2 tablespoon instant minced onion |
2 teaspoons prepared horseradish |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
9 ounces corn beef spread |
40 cheddar cheese cubes |
1 egg slightly beaten |
1/4 cup breadcrumbs |
vegetable oil |
Directions:
1. Combine potato buds, water, onion, horseradish, salt and pepper. 2. Stir in corned beef and mix thoroughly. 3. Roll 2 teaspoons corned beef mixture around a cheese cube to form a ball. 4. Dip balls in egg then roll in breadcrumbs. 5. Deep fry in hot oil 3 minutes then serve hot. |
