A really inexpensive stew that my mom used to make when we went camping. Cooked right over the campfire in a cast iron pot. I am posting this from memory as my mom can't find the original. Please give comments if you want to help make this recipe better. Ingredients:
1 (12 ounce) can corned beef, cubed |
1 large onion, chopped |
3 large potatoes, cubed |
2 -4 cups cheddar cheese |
1 cup cream |
1 (15 ounce) can creamed corn |
salt and pepper |
Directions:
1. Boiled cubed potatoes and onions in just enough water to cover. When soft, add corn and cream. Cook 5 minutes. Add corned beef and slowly add cheese depending on how thick you want it. If after adding all 4 cups of cheese it's not thick enough for you, just make a corn starch slurry until the right consistency is reached. |
