Corned beef, potatoes, tomatoes, onions, and tons of garlic make this Filipino family recipe an excellent quick and easy dish to serve over rice. Ingredients:
1 tablespoon vegetable oil |
4 cloves garlic, chopped |
1 onion, diced |
1 tomato, chopped |
1 large potato, diced |
1 (12 ounce) can corned beef |
salt and pepper to taste |
Directions:
1. Heat oil in a large skillet over medium-high heat. Add onion and garlic, and cook until fragrant. Stir in the tomatoes and potatoes, and cook for 7 to 10 minutes until potatoes are softened. Add the corned beef, and flake into pieces. Cook for another 10 minutes, stirring frequently. Season with salt and pepper, and serve. |
