This is one of the easiest Corned Beef dishes I have ever made. This recipe was given to me by my friend in Panama City Fl. Marty Swartz. Not only good for a St. Paddy's Day party but anytime of the year. Ingredients:
1 1/2 lbs corned beef |
2 lbs sauerkraut, drained |
16 ounces swiss cheese |
8 ounces thousand island dressing |
8 ounces mayonnaise |
1/2 cup butter |
2 (5 ounce) packages croutons |
Directions:
1. Spray the bottom of a 9 x 13 baking dish. Then start with a layer of sauerkraut, corned beef and Swiss cheese, repeat once more. In a bowl mix Thousand Island dressing and Mayo until smooth, pour over casserole and top with croutons and drizzle melted butter over top. Bake at 350 for 35 minutes. |
