Easy and delicious corn,scallion and cheese biscuits.From First. Ingredients:
2 pkgs.(6.5oz.ea) corn muffin mix |
5tbs. salted butter,divided |
3oz. shredded-cheddar-jack cheese(about 3/4c) |
2 scallions,finely chopped |
1/3c milk |
Directions:
1. Heat oven to 425. In food processor,pulse corn muffin mix and 4 Tbs. butter 2 timews. In bowl,combine muffin mixture,cheese and scallions. Using fork,stir in milk just till dough forms. 2. On lightly floured surface,roll out dough to 1 thick round. Using 21/4 cowboy boot or round cookie cutter,cut out 8 biscuits. Place on foil-lined 3. baking sheet. 4. In micro-safe bowl,microwave remaming butter 15 sec. or till melted. Brush biscuits with melted butter. Bake 10 mins. |
