This is very tasty. A family favorite for several years. Nice salad for a hot day. Enjoy Ingredients:
1 box jiffy corn muffin mix, prepared as directed, cooled and crumbled |
1/2 c. pickle relish (not salad cubes) |
1/2 c. pickle juice from relish |
1 chopped red onion |
1 chopped bell pepper |
2 chopped fresh tomatoes |
2 jars real bacon bits (i suggest the tall hormel jars) |
1 pint mayonnaise |
Directions:
1. Layer half cornbread, pickle relish, pickle juice, onion, bell pepper, tomatoes, bacon bits and spread with half of mayonnaise. 2. Repeat layers. 3. Chill before serving. |
