My mom gave me this recipe. I previewed all other like ones on this site. Mine has fewest ingredients, so I look forward to tweaking mine w/ others to enhance it. Ingredients:
1 cup yellow cornmeal |
1 cup all-purpose flour |
1/4 cup sugar, if desired |
4 teaspoons baking powder |
1/2 teaspoon salt |
1 cup milk |
1 egg |
1/4 cup shortening |
8 ounces cornbread |
3 green onions, fresh, chopped |
1 bell pepper, chopped |
1 tomato, chopped |
1/2 cup mayonnaise |
1/2 teaspoon salt |
2 teaspoons mustard |
1/2 teaspoon pepper |
Directions:
1. Cornbread:. 2. Combine dry ingredients. 3. Combine others. Mix both together. 4. Bake in greased 8 square baking pan in preheated 425 deg. oven 20-25 minute. 5. Salad:. 6. Crumble cornbread in bowl. 7. Add onion, pepper, & tomato. 8. Mix mayo, mustard, pepper, salt. 9. Cooked, crumbled bacon, optional. 10. Pour over, stir & chill. 11. (My cornbread recipe is off of Aunt Jemima's yellow cornmeal). |
