This is a great side to Chili or my Sausage Bean Bake. Don't worry if it looks undercooked when its finished - it's supposed to have a moist, custard-like consistency! Ingredients:
2 eggs |
1 cup sour cream |
1 can whole kernel corn (15-1/4 ounce size) drained |
1 can cream-style corn (14-3/4 ounce size) |
1/2 cup butter -- melted |
1 package corn bread/muffin mix (8-1/2 ounce size) |
Directions:
1. In a large bowl, combine the first five ingredients. Stir in corn bread mix just until blended. Pour into a greased 9x9 baking dish. 2. Bake, uncovered, at 350° for 40-45 minutes. Serve warm. |
