Cornbread muffins with cheese and cumin added. Very tasty Ingredients:
11/2c cornmeal |
2tbs sugar |
2tsp. baking powder |
1tsp. salt |
1/4tsp. ground cumin |
1/2c. grated sharp cheddar cheese |
1/2c vegetable oil |
1/2c whole buttermilk |
2 large eggs,lightly beaten |
Directions:
1. Preheat oven to 375. Grease a 12 -cup muffin tin or cornbread molds. 2. In a medium bowl,combine cornmeal,sugar baking powder,salt and cumin;stir in cheese. 3. Add oil,buttermilk and eggs,stirring just till dry ingredients are moistened. Pour evenly into prepared pan.. Bake 12-14 mins.,or till lightly browned. |
