Ingredients:
2 1/2 cups yellow cornmeal
1 1/4 teaspoons salt
1 teaspoon granulated sugar
4 teaspoons baking powder
3 large eggs
1 1/4 cups buttermilk, room temp
4 tablespoons unsalted butter
Directions:
1. Preheat oven to 425 degrees.
2. Butter 8 square dish.
3. Whisk cornmeal, salt, sugar, and bakin gbowder in large bowl.
4. Whisk together eggs, buttermilk, and butter in medium bowl.
5. Add egg mixture to cornmeal mix, and stir.
6. Pour batter into prepared baking dish.
7. bake until golden and, a toothpic comes out clean, about 25 minutes.
8. Let cool slightly in dish on wire rack.
9. Run knife around edges of dish to loosen.
10. Invert.
