Cornbread and Sausage Stuffing |

A favorite at Thanksgiving Ingredients:
2 tablespoons olive oil |
1 cup chopped andouille sausage |
1 small yellow onion, chopped |
1/2 cup chopped green onion |
4 tablespoons chopped celery |
4 tablespoons chopped green bell peppers |
2 tablespoons minced garlic |
2 cups coarsely crumbled corn muffins |
1 cup chicken stock |
1 teaspoon creole seasoning |
salt and pepper |
Directions:
1. Heat oil in a large skillet over med. high heat. 2. Add yellow onions and sausage. 3. Saute 1 minute 4. Add green onion, celery, bell peppers and garlic. 5. Saute 1 minute 6. Stir in corn muffins, stock and Creole season. Season to taste with salt and pepper. 7. Cook stirring and shaking the skillet about 2 minute 8. Remove from heat and serve. |
