Cornbread and Sausage Stuffing

A favorite at Thanksgiving
Ingredients:
2 tablespoons olive oil
1 cup chopped andouille sausage
1 small yellow onion, chopped
1/2 cup chopped green onion
4 tablespoons chopped celery
4 tablespoons chopped green bell peppers
2 tablespoons minced garlic
2 cups coarsely crumbled corn muffins
1 cup chicken stock
1 teaspoon creole seasoning
salt and pepper
Directions:
1. Heat oil in a large skillet over med. high heat.
2. Add yellow onions and sausage.
3. Saute 1 minute
4. Add green onion, celery, bell peppers and garlic.
5. Saute 1 minute
6. Stir in corn muffins, stock and Creole season. Season to taste with salt and pepper.
7. Cook stirring and shaking the skillet about 2 minute
8. Remove from heat and serve.
