This recipe was submitted with my Chipotle Chili recipe at hubby's chili cook off at his workplace. It was a hit. Proclaimed a fave from my Mom's kitchen! Ingredients:
pre-heat oven to 350 degrees |
1 cup butter,1 cup sugar,4 eggs |
cream butter & sugar,add eggs 1 at a time, mixing in well. |
1 can(4 oz.) calif. green chillis(shredded & chopped) |
(1/2 can of chili or more if you want it hotter or no chili) |
1 can(1 lb.) cream style corn |
1/2 cup shredded jack cheese |
1/2 cup shredded mild cheddar cheese |
1 cup flour |
1/2 cup yellow corn meal |
4 teaspoons baking powder |
1/4 teaspoon salt |
Directions:
1. Pre-heat oven to 350 degrees 2. 1 cup butter,1 cup sugar,4 eggs 3. cream butter & sugar,add eggs 1 at a time, mixing in well. 4. 1 can(4 oz.) Calif. green chillis(shredded & chopped) 5. (1/2 can of chili or more if you want it hotter or no chili) 6. 1 can(1 lb.) cream style corn 7. 1/2 cup shredded jack cheese 8. 1/2 cup shredded mild cheddar cheese 9. Add to butter mix: 10. 1 cup flour 11. 1/2 cup yellow corn meal 12. 4 teaspoons baking powder 13. 1/4 teaspoon salt 14. Mix well -blend into corn mixture 15. Mix well 16. Pour into greased & floured baking pan. 17. Bake at 350 degrees for 1 hour or until knife comes out clean. Enjoy! 18. *My Mom’s famous cornbread! |
