Moist and healthy. I make this all the time with soups and chili. Ingredients:
1 1/4 cups flour (can use whole wheat) |
1 cup cornmeal |
1 tsp baking powder |
1/2 tsp baking soda |
1/2 tsp salt |
1 egg |
3/4 cups buttermilk |
1/2 cup cottage cheese (can use plain yogurt) |
2 tbsp honey |
2 tbsp butter or margarine |
1 cup corn (thaw if using frozen) |
Directions:
1. Sift dry ingredients. 2. Mix the rest (except for corn) until smooth. 3. Add corn to wet ingredients. 4. Add to dry ingredients and mix until just combined. 5. Spread into 8 by 8 inch pan. 6. Bake at 325 degrees for 30 minutes or until top is slightly golden and toothpick comes out clean. |
