From Quick Cooking, this is a great side dish for a barbecue or potluck. Ingredients:
1/4 cup onion, chopped |
1/4 cup green pepper, chopped |
1 tablespoon butter or 1 tablespoon margarine |
2 cups frozen corn or 2 cups canned corn |
1/2 medium tomato, diced |
1 teaspoon salt |
1/8 teaspoon pepper |
cayenne pepper, to taste |
Directions:
1. In a large saucepan, saute onion and green pepper in butter until tender. 2. Stir in corn, tomato, salt, pepper and cayenne. 3. Reduce heat; cover and cook for 5 to 10 minutes or until heated through, stirring occasionally. |
