Now these are not authentic by any stretch of the imagination but they are good. I like to make these for Enchiladas. These are easy to make with items you most likely have on hand. Ingredients:
1 1/4 cups flour |
3/4 cup cornmeal |
1 teaspoon salt |
2 tablespoons shortening |
1 cup boiling water |
cooking spray |
Directions:
1. Combine Flour, corn meal and salt. 2. Cut in the shortening 3. add boiling water and mix well. 4. Shape into 12 equal balls,. 5. press between two sheets of waxed paper into 6 circles. 6. Fry on hot, lightly greased griddle. (I just use Pam). |
