fresh & light Ingredients:
1/4 c. lime juice |
1 tbsp honey |
1 jalapeno, seeded & finely chopped |
3 tbsp fresh cilantro (or 1 tbsp fresh mint) |
1/4 tsp salt |
6 fresh ears of corn, husked & cleaned (or 3 c. frozen whole kernel corn, thawed) |
1-1/2 c. baby spinach leaves |
1 lg. tomato, seeded & chopped |
1 lg. seeded, chopped cucumber |
Directions:
1. In a large bowl, whisk together lime and honey until well combined. Stir in jalapeno, cilantro & salt. 2. Carefully cut corn kernels off cobs. Add to lime mixture. Stir in spinach, tomato & cucumber. Serve immediately. |
