A comfort food dish inspired by colonial menus. An excellent side dish for your holiday table. The leftovers are excellent for breakfast. Ingredients:
1 15 oz can whole kernel corn |
1 15 oz can cream style corn |
4 eggs |
1 stick of butter |
8oz fat free sour cream |
1 box of jiffy brand corn muffin mix |
scant 1/4 cup sugar* optional |
Directions:
1. Preheat oven to 350 degrees. 2. Mix all ingredients together. 3. Pour into a greased 2.5 quart casserole. 4. Bake uncovered for 45-60 minutes depending upon your oven 5. You could also make this recipe savory by omitting the sugar and adding your choice of fresh herbs. |
