Serve with a salad, rolls and tea. Ingredients:
4 tbsp. flour |
1/4 cup oil |
3 strips bacon, fried crisp and chopped |
2 whole tomatoes |
1 cup onion, chopped |
2 quarts water |
1 lb. shrimp, peeled and deveined |
1 1/2 cups fresh corn |
3 tbsp. bell pepper, chopped |
3 tbsp. parsley, chopped |
salt to taste |
tobasco to taste |
Directions:
1. Make a brown roux with oil and flour. Add onions and bell pepper. Cook for a few minutes, stirring often. Add bacon, shrimp, tomatoes, and corn. Cook about 30 minutes, covered on low heat. Stir occassionally. Add water, Tobasco, and salt and simmer about 1 hour. Add parsley and cook another 30 minutes. |
