A different type of Soup that fills you up. Ingredients:
1/4 pound butter |
1/4 pound flour |
1 small onion, diced |
2 celery stalks, diced |
2 cups chicken broth or stock |
1 cup milk. scalded |
2 cups corn (or more if desired) |
salt, pepper, nutmeg to taste |
Directions:
1. Saute veggies in butter until tender 2. Add flour to make a roux. 3. Cook lightly, til roux turns a golden shade. 4. While whisking, add stock and scalded milk. 5. Add corn and seasonings. 6. Simmer and serve. |
