I started making this soup with leftover barbeque meat, and it has evolved into something my whole family looks forward to after family barbeques. Ingredients:
1-2 c leftover barbeque meat-anything goes: chicken, beef, pork (any meat can be used, but i prefer bbq leftovers) |
bag of frozen mixed veggies |
bag of frozen corn |
2 cans creamed corn |
1 can rotel |
one medium onion, chopped |
1/2 c chopped bell pepper |
1/2 c chopped celery |
2 tbsp minced garlic |
4 c water |
4 chicken boullion cubes |
6 frozen mini ears of corn |
1/2 tsp cayenne pepper |
1 tsp basil |
2 tsp parsley |
1/2 c barbeque sauce |
salt and pepper to taste |
Directions:
1. Boil all ingredients together for about one hour, and enjoy! |
