SIMPLE! So yummy, though! This was one of my favorite meals as a child; I recently got the recipe from my mother and I was surprised at how easy it was, but it still tasted like I remembered! Great served with hot sauce or salsa. Would make a great breakfast, although I think I've always eaten it as a dinner. Ingredients:
1 lb bulk sausage |
4 -5 large eggs |
2 cups cream-style corn |
salt or pepper or sauteed onion, etc |
Directions:
1. Fry and crumble sausage. 2. Mix eggs and corn together thoroughly; add sausage and seasonings/sauteed veggies. 3. Turn into a lightly greased 2 quart casserole dish. 4. Bake at 350°F for 1 hours. |
