Use fresh or frozen corn for this easy corn salad that you can make ahead and keep refrigerated until serving time. Ingredients:
4 cups fresh or frozen whole-kernel corn |
1 cup chopped green bell pepper |
1/2 cup chopped red onion |
1/4 cup chopped fresh parsley |
1/4 cup balsamic vinegar |
4 teaspoons honey mustard |
2 teaspoons olive oil |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
Directions:
1. Cook corn in boiling water 1 minute; drain. Combine corn, bell pepper, onion, and parsley in a large bowl. 2. Combine vinegar and remaining 4 ingredients in a jar; cover tightly, and shake vigorously. Pour over corn mixture, and toss gently. Cover and chill 1 hour. |
