This is a great way to use vegetables from the farmer's market. It can be a side dish, or try serving it under grilled fish or shrimp.
Ingredients:
3 cups shoepeg corn (frozen or canned & drained)
2-3 small tomatoes, chopped
3-4 stalks celery, chopped
1 yellow onion, chopped
1 cucumber, peeled and chopped
1 green bell pepper, chopped
1/4 cup reduced fat mayonnaise
1/4 cup reduced fat sour cream
2 tsp. white vinegar
1 ts.p dry mustard
1 tsp. celery seed
1/4 tsp. salt
1/4 tsp. black pepper
Directions:
1. Combine all chopped vegetables in a large container.
2. Combine mayonnaise, sour cream, vinegar, and spices in a small bowl.
3. Pour dressing over vegetables and mix to coat.
4. Best if refrigerated 8 hours or overnight.
