This is a great way to use vegetables from the farmer's market. It can be a side dish, or try serving it under grilled fish or shrimp. Ingredients:
3 cups shoepeg corn (frozen or canned & drained) |
2-3 small tomatoes, chopped |
3-4 stalks celery, chopped |
1 yellow onion, chopped |
1 cucumber, peeled and chopped |
1 green bell pepper, chopped |
1/4 cup reduced fat mayonnaise |
1/4 cup reduced fat sour cream |
2 tsp. white vinegar |
1 ts.p dry mustard |
1 tsp. celery seed |
1/4 tsp. salt |
1/4 tsp. black pepper |
Directions:
1. Combine all chopped vegetables in a large container. 2. Combine mayonnaise, sour cream, vinegar, and spices in a small bowl. 3. Pour dressing over vegetables and mix to coat. 4. Best if refrigerated 8 hours or overnight. |
