Goes very well with BBQ. Went over very well at a large family gathering. Ingredients available year round.
Ingredients:
2 pks (10 oz each) frozen corn, thawed
2 cups diced green or yellow pepper
2 cups diced sweet red pepper
2 cups diced celery
1 cup minced fresh parsley, preferrably italian
1cup chopped green onions
1/2 cup shredded parmesan cheese, or asiago cheese
2 tsp ground cumin
1 1/2 tsp salt
3/4 tsp freshly ground pepper
4 drops tabasco sauce or 1/2 tsp pepper sauce
1/8 tsp cayenne pepper or to taste
3 tbsp olive oil
2-3 garlic cloves, minced
6 tbsp fresh lemon juice
6 drops worcestershire sauce
Directions:
1. In large bowl, combine the first 12 ingredients. In a glass measuring cup, combine oil and garlic. Microwave, uncovered on high for 1 minute. Cool. Whisk in lemon juice. Pour over corn mixture and toss to coat. Add Worcestershire sauce and mix. Cover and refrigerate until serving.
2. Best served the same day.
