I cut this recipe out of a magazine, but now I have no idea which magazine it was! Time to prepare includes refrigeration time. Ingredients:
1 1/2 cups cucumbers, chopped |
1 (8 3/4 ounce) can corn, drained |
1 (16 ounce) can tomatoes, undrained |
1/2 cup green pepper, chopped |
1 stalk celery, chopped |
3 tablespoons cider vinegar |
2 tablespoons fresh cilantro, chopped |
Directions:
1. Stir all ingredients together. 2. Let stand in refrigerator for several hours to allow flavors to blend. |
