This dish is easy and quick. It goes great as a side dish with the Mexican Chicken. Ingredients:
2 -11 ounces canned corn niblets |
4 tablespoons mayonnaise |
1 (1 lb) bag cheddar cheese (shredded) |
4 fresh jalapeno peppers (chopped) |
1 (16 ounce) bag fritos corn chips (crushed) |
Directions:
1. In med. bowl mix corn, cheese, peppers, and mayo. 2. Cover and chill. 3. Add chips and extra mayo if needed and serve. 4. Needs to be moist not dry. |
