CORN RICE SALAD This recipe came from an Estate sale. I obtained it when I purchased the family collection from the Seeley Estate in Mesquite, Texas in 2000. Ingredients:
4 cups corn |
2 cups cooked rice |
1/4 cup chopped onion |
1 jalapeno pepper chopped |
1/4 cup cilantro |
1/4 cup olive oil |
1/4 cup lime juice |
1/2 cup mayonnaise |
salt and pepper to taste |
Directions:
1. In a bowl combine corn and rice then add onion, jalapeno and cilantro. 2. In separate bowl combine oil, lime juice, mayonnaise, salt and pepper and blend until creamy. 3. Pour over corn and mix to coat thoroughly then cover and refrigerate then serve on lettuce. |
