Had an abundance of ears of corn so thought i would try this Ingredients:
2 cups fresh or frozen corn |
2 cups chopped onions |
2 cups chopped tomatoes |
2 cups chopped seeded cucumber |
1 large bell pepper (any color) chopped |
1 cup sugar |
1 cup cider vinegar |
1 1/2 teaspoons celery seed |
1 1/2 teaspoons mustard seed |
1 teaspoon salt |
1/2 teaspoon ground tumeric |
Directions:
1. In a large saucepan combine all the ingredients, bring to a boil, reduce heat, simmer, uncovered for 20-30 minutes or until thickened. Store in the refrigerator for up to 3 weeks |
