Serve as a relish for hamburgers and hotdogs. Can also be served as a side for grilled meats.
Ingredients:
1/3 cup cider vinegar
2 tablespoons sugar
1 tablespoon cornstarch
3 tablespoons yellow mustard
1/3 teaspoon seasoned salt
1 package (9 oz) frozen corn, thawed and drained
1/2 cup chopped celery
1/2 cup chopped red bell pepper
1/4 cup finely chopped red onion
3 tablespoons sweet pickle relish
Directions:
1. Combine vinegar, sugar and cornstarch in large microwave safe bowl; mix well.
2. Stir in mustard and salt.
3. Microwave, uncovered, on HIGH 1 to 3 minutes or until thickened, stirring once.
4. Add corn, celery, pepper, onion and pickle relish; toss well to coat evenly.
5. Cover and refrigerate 30 minutes before serving.
6. Serve as a relish on hamburgers or hot dogs, or serve on the side with grilled meats.
