A yummy gluten-free, dairy-free pancake. I like these drizzled with honey. Ingredients:
3/4 cup soymilk |
1/2 lemon |
1 egg |
1/2 cup corn, pureed |
1/2 cup corn kernel |
1 tablespoon honey |
2 tablespoons safflower oil |
salt |
1/2 teaspoon baking soda |
1 1/4 cups quinoa flour |
Directions:
1. Combine lemon juice and soy milk. 2. Add other ingredients. 3. Heat a skillet to medium. Add oil. 4. Drop spoonfuls of batter onto skillet and cook on each side until brown. |
