Corn Pudding With Fresh Basil |

This is one of my favorite sides for the summer. You can use canned corn but it's sooooo much better with fresh. Ingredients:
4 cups corn (approx. 6 ears) |
1 cup packed fresh basil leaves, torn |
3 t all purpose flour |
1 t sugar |
1 cup milk |
1 cup heavy cream |
4 large eggs, lightly beaten |
1/4 t. salt |
Directions:
1. Preheat oven to 350 degrees with rack in middle. 2. Butter 2 1/2 quart shallow baking dish. 3. Pulse 1/2 of the corn in a food processor or blender till coarsely chopped. 4. Transfer to large bowl and stir in basil, flour, remaining corn and 1/4 t. of salt. 5. Whisk milk, cream and eggs together and add to corn mixture until combined. 6. Pour into prepared baking dish and bake 45 mins. to 1 hour until center is just set. 7. Let stand 15 minutes before serving. |
