A great holiday brunch buffet dish served with Honey Baked Ham. Also good with any grilled entree. Ingredients:
1 (14.75 oz) can creamed corn |
1 1/2 cups fresh corn (if not available, canned can be used) |
3/4 cup white cornmeal (i'm sure yellow would work also) |
1/2 cup butter, melted |
2 onions, chopped |
3 eggs, beaten |
2 cans diced green chilies, drained ()4.5 oz) |
1/2 teaspoon baking soda |
pinch of cayenne pepper |
1 cup buttermilk |
1 1/2 cups shredded pepper jack cheese |
Directions:
1. Preheat oven to 350 2. Combine the first 7 ingredients and mix 3. Stir the baking soda and cayenne pepper into the buttermilk and add to the corn mixture 4. Lightly butter a 9x13 inch glass baking dish 5. Pour half the batter into the dish, top with the shredded cheese and top with the remaining batter 6. Bake for 55-60 minutes, until top is lightly browned 7. Serve immediately |
