These awesome fried cakes are perfect with soup, chili or just as a side or appetizer. Ingredients:
10-ounce package of frozen corn, cooked and drained |
1/2 cup flour |
1/4 cup milk |
1 tablespoon sugar |
1/2 teaspoon salt |
sprinkle of pepper |
2 eggs, separated |
1 small red bell pepper, finely chopped (about 1/2 cup) |
1/4 cup green onion, finely chopped |
1/2 cup oil for frying |
Directions:
1. Beat flour, milk, sugar, salt, pepper and egg yolks in medium bowl. 2. Stir in corn, bell pepper and onion, 3. Beat egg whites until stiff and glossy, fold corn mixture into egg whites. 4. Heat oil in 10-inch skillet. Drop corn mixture by spoonfuls into hot oil. 5. Fry about 30 seconds on each side until golden brown. 6. Serve with sour cream or cheese dip! |
